Why chefs use fresh kaffir lime leaves

The double-lobed leaf of the kaffir lime carries an intense citrus aroma that defines many Thai dishes. Fresh leaves release far more fragrance than dried or frozen ones, which is why Thai restaurants and hotel kitchens prefer to buy them fresh. We select clean, deep-green leaves without yellowing or pest damage and pack them to limit moisture loss in transit.

How kitchens use it

Kaffir lime leaves are torn into tom yum and tom kha soups, simmered in green, red and panang curries, shredded finely into Thai fish cakes (tod mun pla) and larb, and used in stir-fries, marinades and cocktails. The zest of the kaffir lime fruit is a key ingredient in Thai curry pastes.
